Find a contract they do want to sign and negotiate that. Or find another contractor who will sign. It is so important on a construction project to record the terms of the building contract in writing due to the very large sums involved in building projects and the potential damage and losses that could be suffered if things go wrong. Paperwork, paperwork, paperwork! Its everyone's least favourite task and when a project is going well, no one thinks they will ever need it but as soon as a dispute arises, you will be forever grateful you had your paperwork in order.
